How To Brew A Perfect Pot Of Tea

Manoj Murjani was an avid tea collector long before he co-founded TWG Tea Co. As chairman and CEO, TWG Tea is sold at upscale stores including Dean & Deluca and Harrods in London. He is a purist when it comes to making and drinking tea and thought it was befitting to hear his suggestions for brewing the perfect pot of tea during this cold winter season.

When entertaining or dining Mr. Murjani suggests:

Brewing loose-leaf teas by the pot to maximize flavor. Use large whole leaves and avoid using tiny tea balls. Tiny tea balls don't give the leaves room to unfurl and infuse the water with flavor.
Place about two and a half teaspoons of leaves in a large strainer. Keep in mind, you don't want the water to be boiling hot because it could burn the tea leaves.
After about three minutes and/or up to seven minutes for more delicate varieties like white teas, remove the strainer.
Try to avoid adding milk or sugar and lemon. It tends to overpower the taste.

Here are some excellent tips for pairing tea with particular meals/foods:

When having a light lunch of salmon or a salad, choose a fresh-tasting tea such as a green or white tea. It's light and balances well with the freshness of what you're eating.
With heavier foods such as steak, sip on a more robust or smoky varietals such as Pu-Erh or Lapsang Souchong.
With spicy food, go with a more daring tea spiked with cloves, cardamom or ginger.
The smoky flavor of Earl Grey is a good accompaniment for chocolate.
Try combining iced tea with champagne for a pre-dinner cocktail, using fruity black teas with berry or floral tones.

Entertaining Tips For The Holidays

It's the perfect time to brush up on entertaining tips for this coming holiday season. Most recently, my tips were mentioned in an ARTICLE from the Murietta's Bear Creek Chronicle paper.

The art of friendship can be carried through by inviting friends and family to your home for casual or formal entertaining. From watching a football game to a formal dinner party, intimate gatherings are a way to express appreciation and say "you are special".

I find that when inviting guests to your home, there is a bonding that does not occur when going out to dine. There is something to be said for seeing one in their personal surroundings ... how they decorate, their attention to detail in their home, the food they serve , how they handle the evening.... It is easier to have uninterrupted conversations and be more comfortable.

Especially in today's economic environment, entertaining at home can be less costly. It also gives you a good reason to be creative in decorating your surroundings and setting your table. White Memorial Medical Center Gala

On Sunday October 25 the White Memorial Medical Center Gala Awards hosted special recognitions, heartwarming patient stories, and generous contributions. WMMC is best known for outstanding women’s, children’s, diabetes, orthopedic, heart and vascular, cancer, rehabilitation, and emergency services.

The evening was a record-breaking charity event. The non-profit hospital raised nearly a half a million dollars to support the healthcare services it provides to the community.

We all enjoyed an art-inspired evening at Peter Blake's Gallery in Laguna Beach on 10/22. DJ Hall and I talked about the table. I described it as a personal time-line of my life, seeing the table more than a place to eat. DJ showed her slides and commented on how the table served as a focal point for organizing her paintings. A jammed packed room and good discussion made this a special evening.

Here are my thoughts about the table:

The dining table isn’t just a symbol of a place to eat. It represents a personal time line... appealing more to emotions than to the food. We remember the earliest tables from growing up, starting with a high chair and then when in grade school. I am sure we can all think about the plastic looking table clothes, formica tops or place mats as well as the leatherette chairs. These are memorable not because they are so stylish retor, but because it was what we simply had. Important occasions were celebrated in the dining room with a white tablecloth. We had a huge mahogany table with fancy carved legs. At holiday time, as kids, we found ourselves relegated to a card table known as the ‘kids table”. We’ve all been there.

That’s the thing about a dining table: like symbols in popular culture, it can take many forms. The table is more than just a table. It reflects who we are and how we live. It’s the place we break bread, convene with family and friends, celebrate a holiday, toast life’s most important, as well as most private moments. The table is filled with memories of the past and those to be written in the future.

The Venice I Love!

I immediately had a love affair with this city while approaching our landing into the Venetia Airport and seeing the stream of water taxi’s driving in their lanes along the blue sky waters. The sun was bright and the boat’s chrome reflections bounced in the water like bursts of energy.

Luggage and all, we took a water taxi to the legendary Gritti Palace Hotel. While speeding through the Grand Canal, I see my first gondola. My heart beats as it is just like what you see in the movies! There were streams of gondolas… all pristine and shiny black, embellished with flowers and gold decoration. The gondolier is the master of the Grand Canal - fit and tan and with the recognizable black and white stripe shirt and black hat. I had goose bumps and I said to myself, “I’m never leaving”.

We approached the dock of the Gritti and was greeted by a meticulously uniformed bell captain who escorted us to the lobby. I then realized that old is precious and new is out. Venice remains, as always, committed to its past, holding on to their treasures such as San Marco square and not adjusting easily to the impressive Pinault Contemporary Art Center or the Peggy Guggenheim modern art collection.

The small winding roads that seem to go on forever are passages to the smallest of stores and ateliers where craftsman practice their trade that has been handed down to them from generations before. The streets are a maze. Along with stores, you will find neighborhood bars, established restaurants, boutique hotels and local homes. Walking the bridges over the canals brought views of geranium flower pots on window ledges, the mesmerizing canal and of course, the gondolas. It is a mix and match of old, very old buildings along with hundreds of tourists with cell phones, video cameras and other hi-tech devices walking up and down these bridges from the past.

People are more than friendly and everywhere we stopped, we struck a conversation. We had the good fortune of eating at amazing restaurants… all different but all genuinely Venetian in every way:

Osteria Oliva Nero – Our first night we were greeted with warm hospitality at this family owned restaurant. The food was traditional Venetian. Dino and Isabella create a memorable meal with their stuffed zucchini flowers. The sea bass is divine. When leaving, they present a gift of olive oil in a burlap bag. This restaurant is a must!

Da Fiore – This barrel-vaulted, somewhat formal restaurant offers Chef Mara Martin’s deceptively simple fare: from plates of the deep-fried calamari, scampi and zucchini to a dessert of pineapple soup with mint and fresh berries. There is impeccable service from the staff that takes enormous pride in caring for you in a formal, elegant way. The best tables are on the outdoor balcony overlooking the canal. There we met a young couple on their honeymoon from Colorado. With tables so close, it was hard not to strike up a conversation… and one we thoroughly enjoyed.

The Value of Custom Giving

A Formula for Motivating Employees

Diana Martin Gifts was asked by a company to provide gifts for approximately 1600 of its employees this past year for an award program recognizing its top employees. One of the trips was held in Hawaii while the other two were in Las Vegas. All trips were filled with activities as well as welcome gifts and room gifts all designed to reward employees that worked hard and brought financial success to their company. A recent survey was sent out to gather feedback on the trips and services/awards to evaluate the correlation between incentives and performance. The results were clear: incentives motivate employees to perform at their best.

Results were based on a 5 point scale system for each survey given out in which 5 meant they strongly agreed and 1 being they strongly disagreed. Of the 1,095 surveys sent out for all 3 trips, 811 responded … about 74% of the attendees.

The surveys from all 3 trips were combined and the results are as followed:

86.7% said they strongly agreed (4.8 rating) when asked the question if giving out the award incentives encouraged them to excel in performance

89.7% said they strongly agreed (4.9 rating) when asked if it was important to have an awards program

When there are changes, you step back a moment and look what could have been done differently. If you are honest with yourself, you can learn from your decisions .. thanking yourself for the insight to make good decisions and determining how you could have made better choices with the poor ones.

My business is surrounded by changes .... by the slow economy and selling luxury gifts to staffing. Adapting to a new environment where prices are being driven down and margins are smaller is difficult to accept but the new reality. Thinking outside the box and being innovative is key to success today.

A recent "Corner Office" interview in the Sunday NY Times on James Schiro, CEO of Zurich Financial Services, says that the most important lesson he's learned in leadership is the ability to listen and let others know you are listening. When he hires an assistant, he looks for a smart, energetic and bright person and one that can understand the way he works and operates. He says that if he has to tell them what they ought to be doing, then they are not doing their job.

As an entrepreneur, I sometimes focus more on the business mechanism and forget about the Leadership required to run the company. With Leadership and communication, your staff can pull through the worst of times with teamwork ... the blueprint of success.

I thought to take a step back and look into the history behind this day where mothers all over the world gleam with delight. It happens to be the second highest retail grossing day outside of Christmas and one of restaurant’s most busiest days. Here is what I found:

People in many ancient cultures celebrated holidays honoring motherhood, personified as a goddess. Here are just a few of those:

Ancient Greeks celebrated a holiday in honor of Rhea, the mother of the gods
Ancient Romans celebrated a holiday in honor of Cybele, a mother goddess. The celebrations were notorious enough that followers of Cybele were banished from Rome
In the British Isles and Celtic Europe, the goddess Brigid, and later her successor St. Brigid, were honored with a spring Mother's Day, connected with the first milk of the ewes.

In addition to the popular Mother's Day holiday in the United States, many cultures celebrate a Mother's Day:

Mother's Day in Britain -- or Mothering Sunday -- is the fourth Sunday in Lent
The second Sunday in May is Mother's Day not only in the United States, but also in other countries including Denmark, Finland, Italy, Turkey, Australia and Belgium.
In Spain, Mother's Day is December 8, on the Feast of the Immaculate Conception, so that not only mothers in one's family are honored, but also Mary, mother of Jesus.
In France, Mother's Day is on the last Sunday of May. A special cake resembling a bouquet of flowers is presented to mothers at a family dinner.

Taking a step forward and taking the commercialism out of the day, it is a day honoring moms. Today, a mom is a super multi-tasker, balancing everything in all aspects of life while maintaining sanity!

What some consider to be a simple and unassuming desk accessory has been locked in treasure vaults of royalty and collected by the world’s most famous personalities.

The history of the paperweight is fascinating. During turbulent times of Napoleonic France, around 1845, Parisian glasshouses began to create pieces of crystal that would permanently impact the history of glass art. Designed originally as an elegant gift item for sale to the burgeoning middle class, each piece carried a sentiment. Here’s a feel good story that I wish to share with you. A long-time client, a CEO of a mid-size company, called and asked for help in ways to get attention of another CEO who had been ignoring his requests to get together. Q: What inspired you to design a heart tray? Was it Valentine's Day or a special thought? Is there any significant meaning behind the tray's name, Amore?

Everyone is attracted to the heart-shape, it a symbol of love and romance. The soft, generous outline is so feminine and in many ways reminds us of tenderness. In stainless steel, it is a wild twist in contrast and I enjoy that paradox. "Amore" is Italian for love, and what culture does it better?

Q: When does this tray sell the most? Is it Valentine's, or anniversaries or for wedding gifts?

This is a year round item for us, many people collect heart shapes and are thrilled to find a heart in a material they do not have in their personal collection. Q: Why is there such a huge desire for artisan chocolate?

The trend for understanding good food began with Julia Child. As people became more educated, they started traveling and seeking out food from different cultures. Next came wine enlightenment, bringing a proliferation of boutique vineyards and small productions. Palates heightened.

Great chocolate is a luxury, like an incredible glass of wine. It's to be savored, not gobbled. Artisan chocolate must meet standards of technique and taste. To be artisan should mean small batches and hand made. Making chocolate is a passion, not a career path.

Q: You have exotic chocolate flavors. How did you come up with these?

Both of my grandparents had large farms where I grew up in the Midwest. Orchards, gardens, berry patches. I know how a fresh blackberry right off the vine tastes. That background coupled with extensive traveling and a few years in Europe makes me curious. Influences come from everywhere. One of my signature chocolates, a rosemary grapefruit caramel, was inspired by a grapefruit sorbet sprinkled with fresh rosemary flowers I had in Mexico.

I seek local growers and strive to be organic. Southern California is a Mecca for gorgeous, fresh flavors.

Q: What chocolates would be the most amorous for Valentine's Day?

Any. I have an Aphrodisiac Collection this year based on some lore and some fact. Chocolate is so sensuous already, I just dressed it a little differently.

Hope is a word which almost everybody uses every day. It can be as simple as, "I hope the weather will be fine today", but may seem more powerful when you say, "I hope my children are safe". In spiritual thinking, Hope has enormous importance. When all else fails, you can still have "Hope". At this point it becomes "Faith". "Hope" doesn't reverse pessimism into optimism.
In some religions "Hope" plays a very important role. It can be passive in the sense of a wish or it could be active if accompanied by a plan. But in the purest sense, it is a dream.

I don't rely on Hope, 'though I use the word often - perhaps I am an iconoclast. But I believe the concept of "Hope" can bide one over, until a clearer path is shown. We live in a world of "Hope", but it can be treacherous. "Hope" without a Plan is only a Dream.

I recently read an article in Forbes: The New Rules of Luxury Spending analyzing the current climate of consumers regarding how they spend on their personal wants.

Here are some salient points that I would like to share with you:

Exclusivity will be embraced as well as quality and dependability. Consumers will be very careful and selective. Buyers will turn into strategic buyers..."carefully shopping price, authenticity and lasting power. We can say goodbye to the days of “shop to you drop” .

Finding items that offer value and rarity will entice a consumer to spend. Deals are made, even with brand labels.

No one can deny that our mindsets have been affected by the recent devastation of the financial markets as well as the uncertainty of the presidential election. Today, the word “luxury” is almost a bad word, and the idea of frivolous purchases makes one seem out of touch.

Ostentatious displays of one’s goods have never been in good taste, nor have gifts meant to show superiority or one-upmanship. However, back in the days of wild spending, ostentatious almost became accepted and everything was appendaged with luxury.

In these crazy times, we still need to say “thank you” and show appreciation to those who are in our personal lives and businesses. Even now more than ever, we wish to hold on to the clients we have, and wish to nurture and give “feel good” thoughts to the friends we have.

The question then becomes, How do we give gifts without feeling remorse or guilt? How do we suggest good taste and deliver a genuine touch of appreciation? It is important to carefully select gifts that are of unquestionable quality and send a message of warmth, comfort, and security.

Top 5 guilty-free gifts for the holiday season:

1. A silk or cashmere throw. There is no better way to convey security, comfort and warmth than with a beautiful throw. Cashmere is the preference, but silk or bamboo throws are also winners. Monogramming enhances the personal touch.

2. Votives. The warm glow of a candle brings a softness to the harsh reality of the current economic crisis. Scented or unscented, they calm your environment.

3. Comfort foods. There is a rise in the sale and consumption of comfort foods when there is uneasiness and anxiety in the air. A box of fancy dark chocolates, roasted almonds, or Italian cookies are all immediate reliefs.

4. Personal luxuries. A silk travel pillow and blanket are sheer bliss when squished in coach on a long distance flight. For those who only travel first class, a silk travel set can rival any airline blanket and pillow.

Mary Jurek established Mary Jurek Design Inc. in 1998 after being presented with four international awards and working several years as a jewelry and watch artiste designing for notable brands including Piaget, Tiffany & Co., Cartier, Wako of Tokyo, Gubelin of Switzerland, and Gump’s of San Francisco.

With a flair for learning foreign languages and a love of international cultures, the young Latin scholar began her college studies with aspirations of becoming a U.N. interpreter. But midway through her academic career, Jurek’s unyielding creativity drove her to switch gears and pursue a degree in fine arts. With a specialization in sculpting and oil painting, the aspiring artisan began setting the stage for her future as a world-class designer, traveling the globe and finding work in Geneva and New York with noted jewelry and watch producers.

Today, Jurek is a successful social entrepreneur and business owner residing in the greater Los Angeles area. Using her past experience working with stainless steel to guide her burgeoning luxury tableware and home design company, it is clear that she has developed a unique line of products that reflect both her personal and professional preferences: organic and unadorned yet beautiful in the most classic sense of the word.

In addition to her craftsmanship, a great majority of Jurek’s time is spent scouting female-owned factories in economically underdeveloped areas where her company can make a positive social impact through creating jobs for local villagers, particularly the oft- exploited young women.

How did you get started as an artist?

I was a daughter of an architect and had a natural ability for drawing. As a young child in grade school, I use to win awards for my drawings. When in college, I didn’t take my drawing abilities seriously and decided to pursue languages for hopes of a good career. However, as time passed, I changed my major to Fine Arts and graduated in painting and sculpture. My career started in the diamond industry, making jewelry. I thought this was a practical profession before realizing how much I wanted to pursue a career in art.

Who or what has influenced your art the most?
The most common response would be "nature" but I would have to take that a little further. The materials I am working with influence me. A designer must have a deep understanding and respect for the natural tendencies of the material. Those qualities initiate the direction and then the artist continues with the flow.

What is your studio like?
My studio is a combination of a large drawing board and two computers. The most sentimental item is my mechanical pencil that I bought 30 years ago. I still use it today and plan on never letting it go.

What do you keep in your studio to inspire you?
I keep lots of books, especially ones on archeology. I reference these books because shapes have not dramatically changed in time. That is, a bowl is still a bowl or vase is still a vase. What has been modified over time is the design detail. I also keep technical books on jewelry making, glass blowing and furniture.

Where are your pieces made?
My line is made in Thailand. I hand pick and closely work with my factories, taking good and kind care of the people. In third world countries, there are communities of workers where families work together. My pieces are made by metal workers in these communities and I now have 7 factories and 90 workers. We employ 2nd and 3rd generation metal workers whose families have made swords and other items for the King of Siam. I chose Thailand for my production because of their attention to detail and understanding of stainless steel.

What’s next in your work?
I am looking into blending more materials with stainless steel, finding other materials to enhance my line with new pieces.
